I’ve been dreaming of making stuffed avocados for years! They are so cheerful looking and who doesn’t love avocados?
It just so happened that a friend of mine sent me a case of beautiful apples so I figured why not make a dish, using avocados and apples. Hence: Chicken apple salad stuffed in avocados 🙂
I call this recipe the fancier version of chicken apple salad. Why? Just look at how festive looking they are. Such a showy way to dress up the apple salad with perfectly ripe creamy avocados and crispy prosciutto.
Did I mention they make a great healthy snack and movie night finger food?
What you need for the Stuffed Avocado Chicken Apple Salad Recipe
- Chicken breasts (poached or grilled)
- 1 apple (green, red, or a combination)
- Celery stalks
- Prosciutto or bacon (optional but extra salty crispy crunch)
- Avocados
- Scallions
- A creamy tangy dressing
Whole30 Ranch Yogurt Dressing – Japanese inspired!
I’m pretty sure you have a favorite go-to ranch dressing but if you are looking for an Asian-inspired touch, give my Whole30 ranch yogurt dressing a try!
What’s so special about it? Besides it’s dairy-free, my Japanese-inspired ranch dressing has a touch of coconut aminos (it adds extra umami deliciousness) and uses thick and rich dairy-free yogurt. It adds extra creaminess and tangy flavor to the dressing that’s not only refreshing but also easy to whip together!
The dressing also works great with peppery greens like baby arugula or this Tatsoi Asian Greens Salad.
How to pick the perfect avocados
There are 3 easy steps that I learn from this article to pick the perfectly ripe avocados –
- Color inspection
- Naval inspection
- Pressure test
About the color, let’s use an example of Hass avocado. If you want to use the avocado right away or the next day, the color should be in dark green (or deep emerald green). If it looks brownish, that means the avocado might be too ripe. There should be no major indentations.
Take a quick inspection of the naval (the little tip where it has been separated from the stem). If you can flick if off easily, the avocado is ripe and ready to eat. If not, that means the fruit was harvested too soon. I also like to inspect the color of the naval, it should be in green and not deep brownish color.
Gently squeeze the avocado with your palm and it should feel the fruit is firm yet has a little give. If the fruit is too ripe, it bruises easily.
To ripen avocados, try placing them in a bag with a banana or apple for 1 – 3 days, checking occasionally. The natural ethylene gases released will help ripen your avocado to perfection.
How to poach chicken breasts that are juicy and delicious (p.s. taste like Thanksgiving!)
We are not talking about flavorless bland chicken breasts here. I’m talking about juicy and tender poached chicken breasts that taste and smell like Thanksgiving holiday. Here’s how –
- Arrange the chicken breasts in a single layer and add cold water to the pot to cover the chicken about 1-inch above or so. (I use 2 lbs chicken breasts)
- Add the dry spices and salt. I use 1 tsp each thyme and rosemary, 1 dry bay leaf, and ½ tsp coarse sea salt.
- Bring the water to a gentle simmer over medium heat then turn the heat down to low.
- Cover the pan and simmer for 8-12 minutes (depending on the size/thickness of your chicken)
- Test with a digital thermometer. It should read 160F at the thickest part.
- Remove the chicken from the water and let it rest for 5 minutes. The temperature should come up to 165F. If not, send it back to the hot poaching water for 10 minutes and the temperature should come up further.

Chicken Apple Salad Stuffed Avocados
Ingredients
- Whole30 Ranch Yogurt Dressing
- 4 pieces prosciutto or turkey bacon, optional
- 1.5 lbs chicken breasts, poached or grilled
- 2 cups celery, diced
- 3 bulbs scallions, chopped
- 1 whole apple, core removed and diced
- Salt and pepper to taste
- Dried thyme, sprinkle
- 3-4 whole Hass avocados
Instructions
- Make the Whole30 ranch yogurt dressing. Crisp up the prosciutto over medium heat about 3 minutes per side, if using. Dice the cooked chicken breasts to cubes.
- In a large mixing bowl, add the chicken, celery, scallions, and apple.
- Drizzle with the dressing. Season with salt and pepper to taste. Sprinkle with dried thyme. Toss well.
- Slice the avocados in half and remove the pits. Place them over a large serving tray. Scoop 2-3 spoonfuls of the chicken apple salad into the avocado boat. Crush the crispy prosciutto and sprinkle them on top and all over. Enjoy it with a spoon!

- If on Keto, swap toasted walnuts for apples.
