This ground beef stir fry with noodles and broccoli is highly customizable and uses affordable pantry staples. You can use any chop meat you prefer with the broccoli and noodles. Or switch up the veggies and use bok choy, carrots, baby corn, or whatever you have on hand.

For the beef broccoli noodle stir fry:

  • Aromatics: Thinly sliced yellow onion and garlic cloves form a flavor base for the stir fry.
  • Broccoli florets: Trim them to similar sizes so they cook evenly.
  • Avocado oil: Or any neutral-flavored oil for stir-frying.
  • Ground beef: I prefer leaner ground beef with 85-90% lean.
    • Variation: You can also use ground turkey, ground chicken, or ground pork.
  • Coarse sea salt
  • Thin spaghetti noodles: I use gluten-free, but you can use any type of noodles you prefer.
  • Chinese cooking wine: Adds authentic Chinese flavor and helps remove the meat smell.
    • Substitution: You can also use chicken stock, Japanese mirin, or Taiwanese michu.
  • Scallions: Chopped and used as a garnish.
  • Toasted white sesame seeds: Used as a nutty, crunchy garnish.

For the sauce:

  • Oyster sauce: Adds a sweet-savory flavor and helps to thicken the sauce.
  • Gluten-free hoisin sauce: I use my homemade version, but you can also use store-bought. Just note that many brands contain a lot of sugar.
  • Light and dark soy sauces: Dark soy sauce adds color and a slightly caramelized flavor.
    • Substitution: Or sub both with coconut aminos for gluten-free.
  • Distilled white vinegar: Adds a sharp, tangy element to brighten the sauce.
  • Ground black pepper
  • Reserved noodle water

How to make ground beef and noodles

This stir-fried ground beef noodle recipe is so quick to make! After a few minutes of prep, the stir-fry process is fast and easy, and it all comes together in one large pan.

  1. Prep: Slice the onion and garlic. Trim the broccoli florets into similar-sized pieces. Mix the sauce ingredients in a small bowl.
  2. Stir-fry the beef: Heat a 12” or large skillet or wok with oil over medium heat. Add the ground meat and break it up into small bits. Saute until cooked through and lightly browned.
  3. Cook the noodles: Bring a large pot of water to a boil and add salt. Cook noodles to al dente following the package instructions. Reserve some of the cooking water to add to the sauce.
  4. Aromatics and broccoli: Add the onion, garlic, and broccoli to the meat pan. Saute until fragrant and then add the cooking wine. Once broccoli is tender, turn off the heat.
  5. Add the noodles and sauce: Drain and add the noodles to the pan without rinsing. Turn the heat on to high and saute the noodles. Add the sauce and pasta water and mix to incorporate.
  6. Garnish and serve: Garnish with scallions and sesame seeds and serve warm.

Ingredients 

  • 2.5 oz yellow onion, thin sliced
  • 0.8 oz garlic clove, thin sliced, 5 large cloves
  • 12 oz broccoli florets
  • 1 tbsp avocado oil
  • 1 lb ground beef
  • 0.5 tsp coarse sea salt, plus extra to salt the water
  • 8.8 oz thin spaghetti noodles, 250 gram
  • 2 tbsp Chinese cooking wine, or chicken stock
  • 2 bulb scallions, chopped
  • Toasted white sesame seeds, garnish

For the sauce:

Instructions 

  • PREP: Thin slice the onion and garlic. Break up the broccoli into florets and in similar sizes. In a measuring cup, combine the sauce ingredients from oyster sauce to pepper. Set them aside ready to use.
  • BEEF: Preheat a large (12-inch or large) saute pan or wok over medium heat until it feels quite warm. Add the oil and the beef. Turn heat up to medium-high and use a wooden spoon to break the meat into fine bites. Season with salt and saute until the ground meat is cooked through and lightly browned, about 6 minutes.
  • BOIL NOODLES: In the meantime, bring a large pot of water to boil and season with salt. Add the noodles and follow the package instructions to boil to al dente.
  • AROMATICS & BROCCOLI: Once the beef is browned, add the garlic and onion. Saute for 1-2 minutes or until you can smell the aroma. Add the broccoli and a splash of cooking wine, saute for 3 minutes or until the florets just turn tender and crisp. Turn off the heat while waiting for the noodles to boil.
  • ADD NOODLES & SAUCE: Reserve 6 tbsp of noodle water, drain the noodles and add them directly into the pan without rinsing. Turn heat up to high, toss with the noodles for a few seconds then pour in the sauce, along with the noodle water. Continue tossing and scooping from the bottom up to incorporate then turn off the heat.
  • SERVE: Serve over pasta bowls and garnish with scallions and toasted sesame seeds. Serve warm.
