Strawberry Chia Pudding with Strawberry Compote!

A few days ago I shared my Instant Pot 1-Minute Strawberry Compote recipe and I absolutely love the chunky fruit texture. The strawberries are sweet and since it’s homemade I was able to replace the sweetener with (blood) orange juice and they become the best healthy sweetener for today’s Paleo Strawberry Chia Pudding!

Chia Pudding Milk Ratio

Similar to my Paleo oatmeal, 3 times the quantity of chia seeds if using dairy-free milk from a carton. If use a canned light coconut milk, increase the liquid to 4 times of the chia seeds quantity. Stir-well, add vanilla bean powder if desire, and chill in the fridge overnight or about 6 hours in the fridge, add strawberry compote or any fruit and sweetener of choice and you’ll have a lovely bowl of Paleo Strawberry Chia Pudding.

How To Make it

To make Paleo strawberry chia pudding is very simple. Soak the chia seeds overnight (or at least 6 hours) in the fridge with milk of your choice. The seeds will gel further. The pudding itself does not have any flavor so you can add flavors such as vanilla bean powder, vanilla extract, maple syrup, honey, or any fruit jam and compote.

White or black chia seeds for pudding?

According to Women’s Health Mag in the UK, there’s no difference between white and black chia seeds. They taste the same so it’s purely for consumers’ aesthetic preferences. They contain basically the same nutrient profile.

Chia seeds are actually members of the mint family. According to WebMD, “an ounce of chia seeds (about 2 tablespoons) contains 138 calories, 10 grams of fiber, 9 grams of fat and 5 grams of protein, as well as 17 percent of your daily calcium needs, 12 percent of your iron and 23 percent of your magnesium.” One ounce of chia seeds contains 5 grams of omega 3’s and they are also high in calcium, phosphorus, and manganese.

Chef tips

Since chia seeds are flavorless and if you prefer lower sugar content in the morning breakfast or dessert, I recommend –

  1. Use canned light coconut milk to give the pudding milk a richer and creamier flavor
  2. sweeten it with any homemade fruit jam or compote so you can control the amount of sugar intake.

Ingredients  

Before serving:

  • 4 tbsp strawberry compote (See notes) , alt. any fruit compote, jam, or sweetener of your choice

Instructions 

  • Soak chia seeds with dairy-free milk of choice. Add vanilla bean powder (optional). Stir-well and store in the fridge for at least 6 hours or best overnight.
  • Before serving, add strawberry compote or any fruit or sweetener of choice. Add a dash more milk for thinner texture if desire. It’s best to finish the soaked chia seeds in 3 days for best texture.
