This cucumber spritz mocktail is light, refreshing, and so simple to make—no blender, no muddler, and no fuss.

It’s made with lemon, mint, a touch of honey for natural sweetness, and topped with bubbly lemon sparkling water. Not too sweet, super crisp, and totally non-alcoholic—perfect for summer afternoons and family-friendly gatherings.

How to make cucumber mocktail

Step 1: Use lemon slices and honey to build a bright citrusy base

Stack the lemon slices at the bottom of your glass and drizzle in the honey. This gives the drink a sweet-tart backbone that pairs perfectly with cucumber. Letting the lemon sit in the honey for a bit also helps release more juice.

Step 2: Shave long cucumber ribbons and press them along the glass for that wow factor

Use a Y-peeler to shave the cucumber into long, even strips. Slightly overlap them to create a sheet, then gently press it inside the glass. This makes the drink look extra elegant—and no muddling or blending needed.

Tip: Press gently but firmly so the ribbons stick. It’s okay if they’re not perfect—it still looks beautiful once the ice goes in.

Step 3: Add ice cubes and pour in chilled sparkling water for instant refreshment

Toss in the ice, then pour in lemon sparkling water. The chill helps the cucumber firm up and keeps the drink crisp and bubbly.

Note: Wait to pour the sparkling water until right before serving so you don’t lose the fizz.

Step 4: Finish with fresh mint and let it sit for just a few minutes

Top it off with mint leaves and let the flavors mingle for about 5 minutes. The cucumber will subtly infuse the drink while keeping its clean, light flavor.

  • Use Persian cucumbers—or English for batch mocktails: Persian cucumbers are crisp, seedless, and the perfect size for making long, thin ribbons. No peeling needed. If you’re making a pitcher for a party, English cucumbers will work well too because of their length—just make sure to slice thinly for the best infusion.
  • Shaved cucumber ribbons keep the drink clear and flavorful: Blended or muddled cucumber can make the drink cloudy. Shaving the cucumber into ribbons keeps the look clean and helps the flavor infuse into the sparkling drink quickly. This version comes together fast and doesn’t require any special tools besides a Y-peeler.
  • Pour sparkling water right before serving: This keeps the drink bubbly and fresh. If you pour too early, the fizz will fade and the cucumber might soften too much.
  • Adjust sweetness to taste: Depending on your lemon sparkling water and how tart your lemons are, you might want a little more honey. Taste and tweak after you build the drink—just give it a quick stir before sipping.
  • Let it sit for 5 minutes: This gives the lemon and cucumber a chance to infuse the water without turning it murky.

Ingredients 
 

  • 3 thin slices lemon cut into rounds, seeds removed
  • 7-8 thin slices Persian cucumber or enough to line the cup
  • 1 tsp honey
  • 8-10 small ice cubes
  • 1/2 cup chilled lemon-flavored sparkling water (unsweetened)
  • A few Sprigs Mint leaves for garnish

Equipment

  • 1 cup-size (237 ml) glass

Instructions 

  • Lemon: Slice the lemon into thin rounds and remove the seeds.
  • Cucumber: Use a Y-peeler to shave the cucumber into long, thin strips. Slightly overlap the strips side by side to form one wide, flat sheet—like a big rectangle.
  • To assemble: Add the lemon slices to the bottom of the glass. Drizzle in the honey. Then gently press the cucumber sheet along the inside wall of the cup, lining it from bottom to top.
  • Add the ice cubes, then pour in the sparkling water.
  • Garnish with mint leaves on top.
  • Let the flavors sit for about 5 minutes before drinking.

Notes

  • Batch mocktails: To make a larger batch for parties, just scale up the ingredients and mix everything in a pitcher using the same ratio.
  • Make-ahead: This drink comes together fast. You can slice the lemons ahead of time, but for the freshest bubbles and best texture, shave the cucumber and assemble right before serving.
