Light, refreshing, and naturally sweetened, this cucumber spritz mocktail is made with lemon, mint, and honey—no blender or muddler needed. Perfect for summer and family-friendly!
Lemon: Slice the lemon into thin rounds and remove the seeds.
Cucumber: Use a Y-peeler to shave the cucumber into long, thin strips. Slightly overlap the strips side by side to form one wide, flat sheet—like a big rectangle.
To assemble: Add the lemon slices to the bottom of the glass. Drizzle in the honey. Then gently press the cucumber sheet along the inside wall of the cup, lining it from bottom to top.
Add the ice cubes, then pour in the sparkling water.
Garnish with mint leaves on top.
Let the flavors sit for about 5 minutes before drinking.
