Caramelized Pork Hash With Brussels Sprouts And Sweet Potato.

This is a variation of my widely popular recipe – Caramelized Grilled Pork Skewers.

I love turning leftovers into breakfast.

The charcoal grilled pork is tender and juicy, paired with brussels sprouts and other crunchy veggies for a quick and deep-satisfying meal.

This is a perfect meal with good protein and fibers. You will feel full longer without going hungry.

Ingredients  

  • For the Caramelized Grilled Pork recipe - Please see Caramelized Pork Skewers Recipe

Other Ingredients:

  • ½ cup sliced brussels sprouts
  • ¼ cup shredded carrots
  • ½ cup diced sweet potato
  • 2 tbsp diced shallots
  • 4 mini chopped cherry tomatoes optional
  • Sea salt and black pepper to taste
  • 1 tbsp coconut oil

Instructions 

  • Slice the cooked grilled pork into bite sizes. Heat 1tbsp coconut oil over medium-high heat in a saute pan. When hot add pork and sweet potato and saute until the sweet potato is cooked through.
  • Add shallots, carrots, cherry tomatoes, and brussels sprouts and season with a small pinch of salt and black pepper. Keep stir-frying for an additional 2 minutes.
  • Serve hot and enjoy!

    Need to allow time for marinade and prep but great flavors
    Never would have added sweet potatoes and brussel sprouts in combo with carrots!
