Bacon wrapped sage chicken

Ingredients  

  • 6 pieces thin sliced chicken tenders
  • 12 fresh sage leaves about 2 leaves/chicken breast)
  • 6-8 slices of bacon We use turkey bacon this time
  • 1-2 tbsp EVOO or Coconut oil
  • Kosher Salt + Black Peper To Taste

Instructions 

  • Season breasts with kosher salt and pepper on both sides
  • Add two -three sage leaves to the top of each breast.
  • Wrap a slice of bacon around each breast, making sure that the ends of the bacon are on the underneath side of the chicken.
  • In a large pan, add EVOO and allow to heat up for a minute over medium high heat.
  • Carefully place chicken (sage side up) in the pan and cook until fat is rendered and bacon is browned, about 6 minutes.
  • Cook until fat is rendered and bacon is crisp and browned, and then carefully flip chicken with long thongs until the second side is cooked through , about 4-5 minutes.
  • Serve & Enjoy !

Notes

  • Wrap the bacon relatively tightly around the sage leaves and chicken to prevent them falling apart.
  • Use tooth picks to secure the bacon if helpful.
