Air Fryer Beef Stir Fry gives you tender, juicy beef with lightly crisp edges, crisp-tender vegetables, and a savory sauce—all without a wok. Once the basket is hot, it needs just 8 minutes of air-frying time.
I was honestly surprised by how good it turned out and how close the result is to beef stir-fried in a hot wok. The air fryer controls the heat and timing for you, so there’s no constant tossing, no stovetop splatter, and very little stir-fry experience required.
Whether you’re a beginner or already comfortable with a wok, this is an easy weeknight method that still gives you restaurant-style results.

Why this beef stir fry works so well in an air fryer

This method is designed for a basket-style air fryer with a removable crisper tray and a solid drawer. Everything cooks directly in the drawer, including the sauce, so no separate pan is needed.
Instead of cooking the beef and vegetables together, I cook them in stages so each gets the right heat and timing.
- Wok-like texture: The beef stays juicy and tender with lightly crisp edges, while the vegetables remain colorful and crisp-tender.
- Saucy, not dry: The savory sauce lightly coats every bite, with a little left to spoon over rice.
- Easy and flexible: Once you know the method, you can use different beef cuts and quick-cooking vegetables.
Key ingredients for air fryer beef stir fry
Think of this recipe as a flexible beef stir-fry formula. Keep the velveted beef, aromatics, and sauce, then change the vegetables based on what you have.

- Beef: Sirloin flap is my first choice because it has a rich beefy flavor and stays tender when sliced thin. Skirt steak, sirloin tip, flank steak, and top sirloin also work well. Look for a lean, fairly flat cut and trim away any thick fat or tough membrane.
- Velveting marinade: Baking soda tenderizes the beef, while water adds moisture and starch helps hold it in. This keeps the inside juicy while the air fryer lightly crisps the surface.
- Garlic and ginger: I use a generous amount because an air fryer doesn’t toss and aerate the aromatics like a wok does. The extra garlic and ginger help build that fragrant stir-fry flavor.
- Stir-fry sauce: Light soy sauce seasons the dish, dark soy sauce adds color, and oyster sauce gives it more savory depth. Chicken stock keeps the sauce loose enough to spoon over rice, while a small amount of starch gives it a glossy finish without making it thick or gloopy. Vegetable options
Bell peppers are the combination shown in the recipe, but I also tested the vegetables below. They all cook well at 380°F for 3 minutes when prepared as directed.
- Bell peppers: Slice them into strips.
- Snow peas or sugar snap peas: Trim the ends and leave them whole.
- Onion: Slice it into strips or small wedges.
- Broccoli: Cut it into small florets so it cooks through quickly.
- Mushrooms: Quarter them so they stay juicy. Avoid slicing them too thin.
- Zucchini or yellow squash: Cut it into small bite-size chunks.
Use any of these in place of the bell peppers, or combine a few. Keep the vegetables in a loose layer so the hot air can circulate and they stay crisp-tender.
How to make beef stir fry in an air fryer
This recipe is made for a basket-style air fryer with a solid drawer. Remove the crisper tray so you can cook directly in the drawer and finish the stir fry with the sauce.
Cook the beef and vegetables separately, then bring them together at the end. This gives each ingredient the right heat and cooking time.

- Slice and velvet (tenderize) the beef
Slice the beef thinly against the grain at a 45-degree angle, aiming for pieces about ⅛-inch thick. Work in the water a little at a time to rehydrate the meat and keep it juicy, then add the starch last. Marinate for at least 15 minutes. While the beef marinates, cut the vegetables into the recommended sizes. Whisk the sauce until the starch dissolves, then stir it again right before using.

- Preheat the basket and cook the beef
Remove the crisper tray and preheat the empty basket at 400°F for 5 minutes. The hot, flat surface works like a preheated wok, gives you more room, and helps prevent sticking.Swirl in the oil and spread the beef into a single layer. A little overlap is fine in a 6-quart air fryer. Cook at 400°F for 2 minutes per side—or only 1 minute on the second side for very lean beef.

- Cook the vegetables
Add the garlic, ginger, and vegetables. Spray with oil, season with salt, and air fry at 380°F for 3 minutes. If you use broccoli or mushrooms, add a little more oil so they cook evenly. - Finish with the sauce
Return the beef to the drawer and add the freshly stirred sauce. Toss and air fry at 400°F for 1 minute—just long enough to activate the starch. The sauce should look glossy and lightly cling to the beef and vegetables; don’t cook it down further.

What to serve with air fryer beef stir fry
Because this stir fry has plenty of spoonable sauce, I love serving it with fluffy white rice made in a rice cooker. Start the rice first so it can cook while you prep and air-fry the beef.
For something cool and crunchy, pair it with my Chinese smashed cucumber salad. Its tangy garlic dressing is a refreshing contrast to the warm, savory beef.

Ingredients
Beef marinade (velvet beef):
- 1.25 lb sirloin flap or skirt steak
- 1 tbsp soy sauce or 1.5 tbsp coconut aminos
- ½ tbsp fish sauce optional but adds extra umami
- ⅛ tsp black pepper
- ½ tsp baking soda
- 2 tsp olive oil
- 2 tsp toasted sesame oil
- 2-2.5 tbsp water
- 1.5 tbsp starch tapioca or potato starch
Aromatics & vegetables:
- 0.9 oz. garlic 7 to 8 large cloves, finely minced
- 0.67 oz. ginger one thick 2-inch knob or about 2½ tbsp minced, finely minced
- 2 whole bell peppers 1 red and 1 green, cored, seeded, and sliced into strips
- ¼ tsp coarse sea salt
Sauce:
- 0.5 tbsp light soy sauce
- 0.5 tbsp dark soy sauce
- 1 tbsp oyster sauce
- ¼ cup chicken stock
- 1 tsp toasted sesame oil
- ⅛ tsp garlic granules
- 1 tsp starch tapioca or potato starch
- 0.5 tbsp shaoxing wine optional
For air frying and serving
- 1 tbsp neutral cooking oil
- Oil spray
- Toasted white sesame seeds for garnish, optional
Instructions
- Thinly slice beef: Hold your knife at a 45-degree angle to create wider, flatter slices. Slice the beef against the grain into thin pieces, about ⅛-inch thick.
- Tenderize and marinate: In a bowl, add the beef and season with everything from soy sauce to sesame oil. Add the water little by little, massaging the beef until fully absorbed. Sprinkle in the starch and mix until evenly coated. Cover and marinate in the fridge for 15 minutes, or up to 1 day in advance.
- Prepare the vegetables and sauce: While the beef marinates, finely mince the garlic and ginger and slice the bell peppers. In a small bowl, whisk together all the sauce ingredients until the starch is dissolved. Set aside.
- Preheat the air fryer: Remove the crisper tray or plate from the air fryer basket. Preheat the empty basket at 400°F for 5 minutes.
- Air fry the beef: Carefully add 1 tablespoon of oil to the hot basket and swirl to coat the bottom. Add the beef and spread it into an even layer. A little overlap is fine, but avoid piling the beef into a thick layer. Lightly spray the top with oil.
- Cook the beef: Air fry at 400°F for 2 minutes. Flip the beef and air fry for another 2 minutes. Transfer the beef to a plate and place it in an unheated oven to keep warm.
- Cook the aromatics and peppers: Add the garlic, ginger, and bell peppers to the basket. Lightly spray the peppers with oil and season with ¼ teaspoon coarse sea salt. Stir to coat, then air fry at 380°F for 3 minutes.
- Add the sauce: Return the beef to the basket. Stir the sauce again so the starch is evenly mixed, then pour it over the beef and peppers. Give everything a quick stir.
- Finish the stir fry: Air fry at 400°F for 1 minute to activate the starch and lightly thicken the sauce. Transfer to a serving plate, garnish with sesame seeds, and serve hot.
Notes
- For leaner beef: If your beef is very lean, air fry it at 400°F for 2 minutes, flip, and cook for only 1 more minute.
- Why use more aromatics? A wok naturally tosses and aerates the garlic and ginger, which releases more aroma. An air fryer does not create that same movement, so I use a little more garlic and ginger to build a fuller stir-fry flavor.
- Air fryer type and size: I tested this recipe in a 6-quart basket-style air fryer with a removable crisper tray and a solid drawer. Remove the tray so the beef, vegetables, and sauce can cook directly in the drawer. If your basket is smaller, cook the beef in batches.

- Storage: Store the cooked beef stir fry in an airtight container in the refrigerator. For the freshest flavor and texture, finish it within 4 days.
- Reheating: Microwave the stir fry on medium power for 1 minute. Stir, then continue heating in short intervals until warmed through.
