- Tapioca or potato starch: Either starch creates a light coating around the chicken and gives the finished sauce its glossy texture.
- Garlic and ginger: I use a generous amount of both so their flavor stays bold and aromatic in the air fryer.
- Stir-fry sauce: Light and dark soy sauces, oyster sauce, rice vinegar, chicken stock, and Shaoxing wine make the sauce savory and balanced, with enough to spoon over rice.

Best vegetables for air fryer chicken stir fry
I use cremini mushrooms in the photos, but this recipe also works well with bell peppers, broccoli, or a combination. I tested all three with the same cooking time, so you can easily use what you have.
- Mushrooms: Cremini and white button mushrooms both work well. Keep the pieces similar in size so they cook evenly.
- Bell peppers: Cut them into bite-sized pieces that are not too thick. Any color will work.
- Broccoli: Cut the broccoli into small florets so the centers become tender before the edges get too dark.
Frozen vegetables: Add up to 1 cup of small frozen vegetables, such as peas, diced carrots, or mirepoix, with the chicken and sauce during the final cooking stage. Add them straight from frozen. I would skip larger frozen stir-fry vegetables because they can release too much water.
How to make chicken stir fry in an air fryer
This recipe was developed in a 6-quart drawer-style air fryer with a removable crisper tray.
Step 1 – Slice the chicken

For chicken breast, use a sharp knife and slice at a 45-degree angle into very thin, sashimi-style pieces. In Mandarin, we call this cut pian—thin, flat slices rather than up-and-down strips. The angled cut makes chicken breast much easier to slice thinly.
For chicken thighs, cut the meat into small ½-inch cubes. This cut is called ding, meaning a small dice.
Step 2 – Velvet the chicken

Massage the seasoning into the chicken until all the liquid is absorbed. This helps the moisture and flavor stay inside the meat.
Add the starch next, followed by the oil. The starch forms a light coating that holds in the juices and gives the chicken lightly crisp edges. Use 2 teaspoons for chicken breast and 4 teaspoons for thighs—I found that thighs have a wetter surface and need a little more. The chicken should look plump and lightly tacky, not wet.
Step 3 – Prepare the sauce and aromatics

Mix the stir-fry sauce and prepare the garlic and ginger while the chicken rests.
I tested this recipe with less garlic and ginger, but the flavor was too quiet. Using a more generous amount made the stir-fry bolder and more aromatic, much closer to one cooked in a wok.
Step 4 – Preheat the drawer and cook the chicken

Remove the crisper tray and preheat the empty drawer at 400°F for 5 minutes. The solid drawer becomes like a hot plate, allowing the chicken to hit a hot surface just as it would in a hot wok.
Spread the chicken in the drawer. A little overlap is fine, but avoid one thick pile.
- Chicken breast: Air fry for 4 minutes, flip and separate the pieces, then cook for 3 minutes more.
- Chicken thighs: Air fry for 5 minutes, flip and separate the pieces, then cook for 3 minutes more.
Transfer the cooked chicken to a plate. It should be juicy with lightly browned edges.
Step 5 – Cook the vegetables and aromatics
Add the vegetables, garlic, ginger, oil, and salt to the same drawer. Air fry at 380°F for 4 minutes, until crisp-tender with a few browned spots.
I cook the chicken and vegetables separately because their textures require different temperatures and timing. If using mushrooms, keep their flavorful juices in the drawer for the sauce.
Step 6 – Bring everything together

Return the chicken to the drawer. Stir the sauce again—the starch settles as it sits—then pour it over everything and toss well.
Air fry at 400°F for 1 final minute. This short burst of heat activates the starch, creating a light, glossy sauce that clings to every bite, with a little extra for rice. It’s how you get that wok-like stir-fry texture while letting the air fryer handle the heat.

Ingredients
Chicken:
- 1.25 lb chicken breast or thighs (skinless and boneless)
- 2 tsp light soy sauce
- 2 tsp water
- ¼ tsp sugar
- ½ tsp baking soda
- ¼ tsp coarse sea salt slightly scant
- 2 tbsp olive oil
- ⅛ tsp ground white pepper or black pepper
- 2 tsp starch tapioca, potato starch
- 1 tbsp oil to stir fry the chicken
Aromatics and vegetables:
- 1.34 oz garlic cloves minced (8 large)
- 0.5 oz ginger minced (2.5 inch thumb size length)
- 14.5 oz Cremini mushrooms
- ¼ tsp coarse sea salt
- 1 tbsp oil
Sauce:
- 2 tbsp oyster sauce
- 0.5 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1.5 tbsp rice vinegar
- 2 tbsp chicken stock
- 1 tsp starch
- 1 tbsp shaoxing wine or sub with chicken stock
Instructions
Prepare the chicken
- Slice the chicken breast: Hold your knife at a slight angle, about 45 degrees, and slice against the grain into thin, wide pieces, about ⅛-inch thick. Transfer to a mixing bowl.
- If using chicken thighs: Trim away any excess fat and dice the chicken into ½-inch pieces.
- Season and tenderize: Add the light soy sauce, water, sugar, baking soda, salt, olive oil, and white pepper. Gently mix and massage the chicken until it absorbs the liquid and looks glossy and slightly sticky.
- Add the starch: Sprinkle in 2 teaspoons starch for chicken breast or 4 teaspoons for chicken thighs. Mix again until every piece is evenly coated. The chicken should feel lightly tacky, not watery.
- Rest the chicken: Let it rest at room temperature for 10 to 15 minutes. You can also refrigerate it while you prepare the remaining ingredients.
Prepare the aromatics, mushrooms, and sauce
- Prepare the aromatics: Finely mince the garlic and ginger, then gather them on a small plate.
- Prepare the mushrooms: Wipe away any dirt with a clean paper towel. Quarter the mushrooms, keeping the pieces similar in size so they cook evenly.
- Mix the sauce: In a small bowl, combine all the sauce ingredients. Stir until the starch is completely dissolved.
Preheat the air fryer
- Remove the crisper tray: Take the crisper tray completely out of the air-fryer drawer. This recipe cooks directly in the bottom of a drawer-style air fryer.
- Preheat: Preheat the empty drawer at 400°F for 5 minutes. Do not add oil yet.
Air fry the chicken
- Add the chicken: Carefully grease the hot drawer with 1 tablespoon oil. Add the chicken and spread the pieces out as much as possible. A little overlap is fine, but spacing them apart helps prevent them from sticking together. I use a 6-quart air fryer.
- Air fry chicken breast: Air fry at 400°F for 4 minutes. Open the drawer and use a firm spatula to flip and separate the pieces. Air fry for 3 more minutes.
- For chicken thighs: Air fry at 400°F for 5 minutes on the first side. Flip and separate the pieces, then air fry for 3 more minutes.
- Remove the chicken: Transfer the fully cooked chicken to a plate and set aside.
Air fry the mushrooms and aromatics
- Add the vegetables: Add the mushrooms, garlic, and ginger directly to the drawer. Drizzle with 1 tablespoon oil and season with ¼ teaspoon salt. Stir to distribute the oil and aromatics evenly.
- Air fry: Air fry at 380°F for 4 minutes. The mushrooms should be softened, with some pieces lightly browned. If they release a little liquid, leave it in the drawer—it will become part of the sauce.
Finish the stir-fry
- Add the chicken and sauce: Return the chicken to the drawer. Stir the sauce again because the starch may have settled, then pour it over the chicken and mushrooms. Use a wooden spoon or spatula to combine everything thoroughly.
- Finish cooking: Air fry at 400°F for 1 minute. The sauce should look light and glossy, coating the chicken and mushrooms while leaving enough flavorful sauce to spoon over rice.
- Serve: Give everything one final stir and serve hot with rice.
Notes
- Air-fryer style and size: This method is designed for a drawer-style air fryer with the crisper tray removed. I use a 6-quart model. If your drawer is smaller, cook the chicken in batches so the pieces are not crowded.
- Why use more garlic and ginger? An air fryer does not toss the ingredients repeatedly against a hot wok, so I use a generous amount of garlic and ginger to keep the flavor bold throughout the dish.
- Chicken make-ahead: Velvet the raw chicken and refrigerate it in an airtight container for up to 2 days. For the best texture, I recommend cooking it within 1 day.
- Freeze: Place the velveted raw chicken in a freezer-safe bag and press it into a flat layer. Freeze for up to 2 months.
- Defrost: Thaw the chicken overnight in the refrigerator before cooking.
- Storage: Store the cooked chicken stir-fry in an airtight container in the refrigerator for 3 to 4 days.
- Reheat: Microwave on medium power for 1 minute at a time until warmed through. Add a small splash of water or chicken stock if the sauce has thickened in the refrigerator.
