Paleo Vietnamese Hearty Beef Stew

I feel so lazy these days.

Partly mental. Partly physical.

Mentally, I’m sad that my summer Fridays have come to an end and I’m back to a 40 hour work week. 🙁

Physically, I want to stay active and keep my gym schedule after work and still eat well at home not at ridiculous late hours.

You and I have both been there.  Busy schedule. Stressful life. Family to feed. Money to save.

I think my point is that we’ve all been looking for a solution to solve a problem we’re all too familiar with – WHAT SHOULD WE EAT TONIGHT ??

I have to tell you that my secret is that no matter what I do, I’ll be sure to have a pot of XYZ stew in my fridge.

The motto here is Cook once and Enjoy many times like this Paleo Vietnamese Hearty Beef Stew.

Simple as that.

So are you ready to open a book of my family stew recipes?

More recipes to come, my friends.
