Bring a large pot of water to boil, and quickly blanch the bean sprouts for 45 seconds. Rinse in cold running water and set aside to drain well.

To make the dressing, combine the ingredients with coconut aminos, garlic, scallions, sesame oil, and salt in a bowl

Combine the bean sprouts with the dressing in a large bow. Toss to combine well. Season with extra sesame oil and seeds.
