Peanut butter sauce cold noodles

Make the Peanut Sauce

Mix peanut butter, toasted sesame oil, soy sauce,  brown sugar, grated garlic, and water. Stir until creamy and smooth. Add more water to reach the desired consistency.

Cucumber and Noodles

Julienne the Persian cucumber and set aside. Boil the noodles according to the package instructions.

Toss the Noodles

Shock them in cold water, then drain and shake off excess water. Place the noodles in a large bowl, drizzle with avocado oil, and toss to prevent sticking.

Assemble and Serve

Add the peanut sauce to each bowl, place the noodles on top of the sauce, garnish with cilantro, peanuts, and cucumber. Toss and serve cold.
