How to make West Lake soup

West Lake beef soup is a hearty ground beef soup with shiitake and tofu. The soup is soothing, flavorful, healthy, and easy to make!

Let’s get started!

Prep the beef

If using steak, slice it thinly then mince the slices into very small pieces. You can also use lean ground beef.

Prep other ingredients

Cut the shiitake and dice the tofu into small cubes. Slice the ginger into thin, wide strips.

Parboil the beef

Add the beef to a pot of boiling water. Parboil for 2 minutes. Drain into a colander and rinse under water for 1 minute.

Make the soup

Saute the ginger, add the tofu, beef, and stock. Gentle boil over medium heat for 10-12 minutes. Then season and thicken it.

Ribbon the egg

With the soup at a simmer, slowly drizzle in eggs from high above. Garnish with sesame oil and cilantro (or scallions) and serve.
