Prepare the shrimp

Hot water blanch the shrimp and shock them in cold water to stop cooking

Season the eggs

Add the slurry - starch and water - to the eggs with the seasonings and gently whisk

Combine them

Gently fold the shrimp into the egg mixture and combine them well.

Stir fry

Add the shrimp and egg mixture to a hot pan and cook gently over medium heat.

Serving
