Instructions
Make watermelon juice:
Add the watermelon into a blender. Use the smoothie setting to puree it until it’s liquefied. You might need to stir 1-2 times.
To remove the watermelon pulp, pass the liquid through a sieve with a jar underneath to catch the juice.
You can prepare the watermelon juice 2-3 days ahead. Seal and chill it in the fridge. Tilt the bottle a few times before using.
Assemble the drink:
Add 2 thin slices of lime to each glass with a few sprigs of mint leaves. Muddle them for a few seconds or until you can smell the fragrance. Fill each cup with ice, about ⅔ way up.
To add the liquid, the proportion of the drink is roughly about ⅓ part peach juice + little less than ⅓ part sparkling water + ⅓ part watermelon juice.
Slowly pour the watermelon juice around the inside edge of the glass. It will gradually rise to mix with the other ingredients.
Leave as is to keep the two colors and flavors separate or gently stir to combine if desired. Garnish with lime slices, mint leaves, and extra watermelon slices on top. Serve right away.

Buy seedless watermelon for convenience.
For 22-24 oz cubed watermelon, you should have about 20 oz of watermelon juice.
The portion of the drink is very flexible. Feel free to adjust to your personal preference.
Other juices: If you can’t find peach juice, mango juice or orange juice also works well.
Frozen drink: Simply freeze the watermelon cubes and blend them until smooth for a slushie version. Skip the straining step for a frothier drink.
Larger crowd: You can easily double or quadruple the recipe for a larger crowd. Simply follow the proportion recommendation above to assemble the drinks.
Make-ahead: Strain and chill the watermelon juice. Chill the peach juice and sparkling water in advance. It's best to assemble the drinks right before serving to keep them fresh and fizzy.
