Kimchi chicken with sweet potato noodle

Ingredients

skinless chicken breasts

sweet potato noodles

kimchi of your chosen
1
bunch
chopped scallions
salt
(for boiling water use)
EVOO or Sesame oil
(to keep noodles from sticking together)
For dressing
1 1/2
tbsp
Miso paste
1/2
tsp
Sesame oil
1/3
cup

Instructions
For the chicken
Season the boiling water with some salt
Poach the chicken until it’s cooked through
Set the chicken aside to let cool
Once it’s cool, shred chicken into thin strips. You can use your hands! Running out of time? Store bought rotisserie chicken will taste great too!
For the noodles
Cook the noodles in boiling water for 5-10 minutes until transparent.
Drain the noodles and rinse under room temperature or cold water
Season with sesame oil or olive oil to prevent noodles from sticking together
Final touch
Combine chicken, noodles, and kimchi. Drizzle the dressing around the chicken and noodles.

Hint:
Taste as you mix the dressing, if too salty for your taste, add more water.
