Ingredients
  • 10 oz. Broccoli florets
  • toasted nuts optional
Lemon garlic butter sauce dairy-free
  • 1 tbsp olive oil
  • 1 tbsp ghee clarified butter, melted
  • Half to three-quarter whole lemon juice
  • 3-4 garlic cloves grated
  • Salt and pepper to taste
Instructions
  1. Broccoli: Run the broccoli florets under water to wash away any grit. To microwave: Place broccoli florets in a microwave safe container or a glass Pyrex dish. Add 1 tbsp water. Cover with a lid or wet paper towel and microwave for about 2 minutes, gently toss the florets at halfway cooking point. To quick blanch: Bring a pot of water to boil, reduce the heat to medium, blanch the florets for about 1 to 1 ½ minutes.

  2. Cook until broccoli is tender but still crunchy. Quickly plunge them in cold water to stop cooking and set them aside to drain.
  3. Sauce: In the meantime, whisk melted ghee, olive oil, grated garlic, lemon juice, and salt and pepper to taste. Mix well.

  4. To Serve: Drizzle sauce over the florets. Toss and let the florets soak up the sauce for about 2 minutes before serving.

If purchase a whole bunch of broccoli (stems with crowns) - Trim off the florets: Slice straight through the broccoli stem as close to the crown as you can get. The crown should break into several large florets. Cut through the "trunk" of each floret to make bite-sized pieces. Try to cut them into similar sizes so they will cook evenly.
