How to roast Chinese eggplant in the oven

Roasted Chinese eggplant is an easy delicious side dish with perfectly caramelized eggplants, tossed in a creamy Asian-inspired sauce.

Let’s get started!

Slice

Cut the eggplant into 1.5-inch wedges at an angle. Roll it 90 degrees and continue cutting until it is all cut.

Season

Season with salt, garlic powder, cumin, and olive oil. Place them in a lined baking sheet pan in a single layer.

Sauce

Make the maple tahini sauce with tahini, garlic, rice vinegar, touch of coarse salt, and maple syrup.

Roast

Roast the eggplant at 425°F (218°C) for 15 mins. Then, season with one more tablespoon of oil and roast for 5 more mins. Combine and serve.
