How to prepare dried shiitake mushrooms

This guide shows you how to cook with dried shiitake mushrooms from selecting/ buying, to soaking and cooking dry shiitake mushrooms.

Let’s get started!

Soaking dried shiitake

Grab a large bowl. Place your dried shiitake in it and fill it up with room temperature water, right to the top. Soak for 6-8 hours or overnight.

After soaking

Gently squeeze the mushrooms to wring out the liquid.  Slice the caps to your desired thickness and shred the stems into thin strips.

Strain the Liquid

Do not dump the soaking liquid. Pour the mushroom water through a sieve to remove any grit. This stock is perfect for cooking.

Store the liquid

After filter it, store the mushroom water in an airtight container in the fridge for 1 month. Use it for soup stock, degalze for saute dishes.
