Panda express mushroom chicken with juicy chicken chunks, zucchini, mushrooms stir-fried in a soy ginger sauce. Healthy, easy, and delicious!

Cube the chicken breasts and toss them in the seasonings and combine well. Set aside in the fridge while you prepare other items.
In a bowl, whisk together the sauce ingredients from stock to ginger. Stir and mix well. Set it aside ready to use.
Preheat the oil in a saute pan, using a chopstick to ensure it’s hot enough. In the meantime, coat the seasoned chicken pieces in tapioca starch.
Pan-fry the chicken in a single layer for 2-3 minutes on each side, until golden. Remove from pan. The chicken should be cooked through.
Saute the vegetables on medium-high heat. Return the chicken to the pan and pour in the sauce. Serve hot.
