How to make Korean zucchini sides

Korean Chilled Zucchini Sides tastes crunchy, garlicky, and refreshing! This popular Korean zucchini recipe is perfect all year round!

Prepare

Trim both ends of the zucchini and use a mandoline slicer to slice the zucchini into thin and round discs.

Salt

In a large mixing bowl, add the zucchini and salt, and use your hands to rub the salt in gently. Set it aside for 20 minutes. This will pull out excess moisture.

Chop

In the meantime, finely mince the garlic, chop the scallions, and prepare and set aside the sesame oil and seeds.

Squeeze

After 20 minutes, use your hands to gently squeeze out extra water from the zucchini and set it aside on a large plate.

Saute

Add the avocado oil to a large saute pan and saute the zucchini over medium-high heat for 1 minute.

Season

Add the garlic, green onions, sesame oil, and white sesame seeds, stir-fry for 1 minute, and turn off the heat.

Serve

Transfer them to a serving plate and garnish with scallion, sesame seeds, and oil. Serve at room temperature or chilled.
