This Paleo egg drop soup is loaded with healthy protein with lean ground meat and bone broth. The perfect soup to boost immunity for winter.

Finely mince ginger, dice scallions (keeping white and green parts separate), and slice shiitake mushrooms.
Sauté Meat and Mushrooms

Saute ground meat, oil, and white scallion parts. Cook until no longer pink. Add sliced shiitake mushrooms to the pot, sautéing until they soften.
Add Liquids and Seasonings

Pour in chicken stock and coconut aminos. Stir in cumin powder. Bring to a boil, then reduce to a medium-low simmer.

Over simmering soup, slow drizzle of beaten eggs, forming ribbons. Let sit briefly, then gently stir to separate egg ribbons. Garnish and serve.
