This Bok Choy Kimchi is a quick kimchi ready in 15 mins! With Vegan/Vegetarian options and detailed instructions on baby or regular bok choy.

Bok choy


Slice the baby bok choy in half, rinse, drain, and pat them dry. For larger bok choy, dice them into bite sizes.

Slice and dice


Thinly slice the red onion and chop the spring onions. Set them aside in a separate plate.

Make the sauce


Make the kimchi seasoning sauce by combining all the ingredients with gochugaru, garlic, vinegar, and (vegan) fish sauce.



In a large mixing bowl, add the bok choy, onion, and sauce. Gently toss to combine. Serve right away
