Mongolian shrimp is a Taiwanese dish with succulent shrimp velveted and tossed in a savory soy garlic Mongolian sauce. Healthy easy to make!

Add shrimp to a large bowl with cold water and baking soda. Gently massage and chill in the fridge for at least 30 minutes. Rinse, pat dry, coat with starch.

Dice the scallions into 1.5-inch sections. Cut open Chinese dry red chili peppers and discard the seeds. Mince ginger.

Pan fry the shrimp and in a single layer over medium-high heat for 2 minutes on the first side and 2 minutes on the flip side.

Saute the aromatics, add the shrimp, pour in the sauce. Toss for 10 seconds then turn off the heat. Serve hot with rice.
