Season breasts with kosher salt and pepper on both sides
Add two -three sage leaves to the top of each breast.
Wrap a slice of bacon around each breast, making sure that the ends of the bacon are on the underneath side of the chicken.
In a large pan, add EVOO and allow to heat up for a minute over medium high heat.
Carefully place chicken (sage side up) in the pan and cook until fat is rendered and bacon is browned, about 6 minutes.
Cook until fat is rendered and bacon is crisp and browned, and then carefully flip chicken with long thongs until the second side is cooked through , about 4-5 minutes.

Notes
Wrap the bacon relatively tightly around the sage leaves and chicken to prevent them falling apart.
