Ingredients

  • 1 lb. fresh strawberries rinsed, top trimmed
  • 4 tbsp fresh (blood) orange juice
  • 1 tsp chia seeds , stir-in after strawberries are cooked
  • ⅛ to ¼ tsp vanilla bean powder optional

Instructions

  • Roughly chop/dice strawberries. Add them to the inner pot with orange juice and vanilla bean powder (optional). Seal the lid and valve. Press 1 minute. When it’s done cooking, wait for 10 to 15 minutes before opening the lid.

  • Press saute function, add 1 tsp chia seeds, stir for about 2 minutes, press cancel/off. Remove the inner pot and allow it to cool completely before storing in a glass container in the fridge. The strawberry compote will thicken as it cools. Best finish in 10 days.

If use frozen berries, add 3 tbsp orange juice instead.
 
For stovetop, add chopped fruit and juice to a saucepan and bring to a gentle boil. Reduce the heat to simmer and use a wooden spoon to stir and mash the fruit to combine. Cook for about 10-12 minutes until the juice is reduced further. Stir-in chia seeds and set aside to cool before storing.
