Paleo Japanese Cold "Ramen" Noodles - Day 2 of 4 Weeknight Meals
This is day 2 of our 4 weeknight meal series. If it's difficult to find Korean sweet potato noodles in your local grocery stores, please feel free to use zucchini noodles.
Poach the chicken breasts in a pot of boiling water.
julienne cucumbers and carrots. Set aside.
Once the chicken is cooked through, set the meat aside to cool and then shred into thin slices.
Season the shredded chicken with 2 tsp sesame oil, 1 tsp sesame seeds (either black or white sesame seeds), salt and pepper to taste
Bring a large pot of water to boil the sweet potato noodles. Cook them according to the directions on the package. Drain and rinse under cold running water. Set aside. If your sweet potato noodles are very long, you may want to cut them into shorter lengths after it's cooked with kitchen shears. Alternatively, you can also prepare zucchini noodles with a spiralizer.
Mix the noodles with 1-2 tbsp of olive oil to prevent the noodles from sticking to each other. (Skip this step if you use zucchini noodles)
Mix all ingredients listed under “Noodle Dressing”.
Combine the noodles with other ingredients - shredded chicken, sliced cucumber, carrots - and drizzle the dressing over the dish.
