What makes my Paleo Tender Pork Roast awesome ?

  • Two versions. Whether you have a slow cooker or a Dutch oven at home, this recipe can be tailored to your personal needs.

Slow cook v.s. Dutch Oven – Paleo Tender Pork Roast

Nate, my husband, loves the slow cooked version because he loves pulled pork. I, however, love the Dutch oven version because it’s super quick to roast them in the oven and the sauce caramelized perfectly like the picture below.

That said, the slow cooked version does make the pork taste more juicy. You can cube the pork like I did to make Stuffed Crispy Potato later on or do pulled pork. Just remember to reduce or thicken the juice/sauce remaining in the slow cooker.

Oven temperature & Bake time

Now if you opt for roasting these beautiful porky babies in the Dutch oven, pay a little attention to your oven temperature.

If your oven tends to get heated pretty quickly, set the temperature to 375F/ 190C. Roast the first side for 20 mins and flip side for 10mins. Check the internal temperature (and the thickest part) until it reaches 145F/ 63C.

My oven doesn’t get hot that easily so I set it for 400F/204C.

Paleo Tender Pork Roast (Dutch Oven Recipe)

Ingredients 

  • 3 lbs boneless pork shoulder

Pork marinade:

  • 3 medium sized shallots
  • 6 small garlic cloves
  • 2 red chili peppers, remove seeds (fresno chili peppers)
  • 1 1/2 cup cilantro (alt. flat parsley)
  • 1 tsp ground coriander powder
  • 4 tbsp olive oil
  • 1 whole lime juice
  • 2 tsp coarse sea salt
  • 1 tsp ground black pepper

Day of cooking:

  • 1 whole California fresh squeezed orange juice
  • 1/2 tsp coarse sea salt

Instructions 

  • A night before: Chop shallots, garlic cloves, red chili peppers, and cilantro. Combine all ingredients listed under “pork marinade”. Combine the marinade with boneless pork loin. Seal in a large zip lock bag and marinate overnight in the fridge.
  • Day of cooking: Preheat oven to 375F or 400F. Slightly drip off the marinade and brown the meat with 1 tbsp ghee clarified butter over stovetop. When both sides of the pork are sealed in light golden brown, turn off the heat. Add one whole California orange juice, ½ tsp coarse sea salt, and the remaining liquid and marinade in the zip lock bag.
  • Cover the dutch oven with a lid and bake 30 minutes total - 1st side 20 mins, flip side 10 mins. Or until the internal temperature reaches 145F. 
  • If there’s a lot of liquid left in the dutch oven, reduce it over medium-high heat for 2-3 mins or thicken it with arrowroot/sweet potato powder/flour. Pour the sauce over roasted pork.

  • Reduce the liquid for 2-3 mins or thicken it with arrowroot/sweet potato powder/flour. Pour the sauce over roasted pork.
