I have a confession to make.  I actually don’t know how to bake bread, let alone being any expert about it.

So to make a post about how to bake bread is kind of scary for me.

By now, you are probably thinking you’ll bounce out of the site and resenting me for wasting your time.

But wait!  Who says I have be an expert in every dish I try in order to write about it? After all, I’m in the best position to report back to you about all the newbie mistakes you’ll want to avoid.

If you are reading this post, you probably love to 1) look at yummy food pictures; 2) drool over the pictures, making your stomach hungry, and then 3) decide to either get a store-bought version to satisfy the craving or, if you’re feeling ambitious, put on a chef’s hat to prove to the world that you can make one too !

Now, my friend, here’s my version of paleo bread with nut crumble toppings after browsing through tons of photos on the web.

Nate, my man, loves it.       I love it.       My chihuahuas love it. 🙂

Yup, it’s so healthy that I feel safe to share a bit pieces with my two fur babies – Cody & Zoe.

Paleo Coconut Honey Nut Crumble Bread

Ingredients
  • [Crumble toppings]:
  • cup walnut and pecan chopped
  • 1 tbsp shredded coconut flakes
  • 1 tbsp coconut oil
  • 1 tbsp honey
  • ------------------------------------------------------------------------------------
  • [Bread]:
  • 6 medium sized eggs
  • ¾ cup sifted coconut flour
  • 1 tsp baking soda
  • 1 tsp great lake gelatin optional
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 1 tsp cinnamon powder
  • ¼ cup coconut oil melted
  • ¼ cup coconut or almond milk
Instructions
  1. Preheat oven to 350 degrees.
  2. Chop topping ingredients (walnuts and pecans) and mix the crumble topping ingredients together in a bowl. Set aside.
  3. In a large mixing bowl, beat eggs, mix in vanilla extract, coconut milk, and melted coconut oil.
  4. In a separate bowl, mix coconut flour, salt, gelatin powder (optional), baking soda and cinnamon together.
  5. Combine dry ingredients with wet ingredients and mix until there are no lumps.
  6. Pour into greased loaf pan, spread it evenly, and sprinkle crumble mixture evenly on top.
  7. Bake at 350 for 40 minutes or until toothpick inserted comes out clean.

Make these for dinner !
