I feel so lazy these days.

Partly mental. Partly physical.

Mentally, I’m sad that my summer Fridays have come to an end and I’m back to a 40 hour work week. 🙁

Physically, I want to stay active and keep my gym schedule after work and still eat well at home not at ridiculous late hours.

You and I have both been there.  Busy schedule. Stressful life. Family to feed. Money to save.

I think my point is that we’ve all been looking for a solution to solve a problem we’re all too familiar with – WHAT SHOULD WE EAT TONIGHT ??

I have to tell you that my secret is that no matter what I do, I’ll be sure to have a pot of XYZ stew in my fridge.

Paleo Vietnamese Hearty Beef Stew with Vegetables.  Delicious Vietnamese beef stew with carrots and sweet potatoes. A perfect heart warming and winter beef stew recipe.

Ingredients
  • 1 ½ lbs beef cubed (I use beef chuck shoulder this time.)
  • 2 tbsp coconut oil
  • 1 large onion diced
  • 4 cloves garlic minced
  • 2 tsp sea salt
  • 3 cups water
  • 4 tbsp tomato paste no salt and sugar added
  • 2 star anise pods
  • 1 large loose carrots cut into chunks
  • 2 medium yam or sweet potatoes cut into chunks
  • 2 cups 2daikon radish peeled and cut into chunks, optional
Beef marinade: (Marinate overnight)
  • 2 stalks lemongrass thick bottom part only, outer layers discarded, inner part minced.
  • 2 tbsp minced fresh ginger
  • 2 tsp chilli powder
  • 1 tsp ground cinnamon
  • 2 tsp curry powder
  • 2 tbsp fish sauce alt. 2 tbsp coconut aminos
  • 2 tsp sea salt
  • 1 tsp ground black pepper
  • 2 tbsp olive oil
Instructions
  1. Marinate the beef cubes overnight.
  2. Heat 2 tbsp coconut oil in a large saucepan or wok over high heat and stir fry onions, and garlic until fragrant. (About 30 seconds to 1 min.)
  3. Add the marinated beef, season with 2 tsp of sea salt, and stir-fry until the beef is browned (About 3 mins).
  4. Add 3 cups of water, 4 tsp of tomato paste, and 2 star anise pods and bring the mixture to a boil.
  5. Reduce the heat to low and continue to cook for about an hour until the beef is tender. (Add an additional cup of water during the cooking process if needed.)
  6. After the beef is tender, add carrot and sweet potato cubes and continue to simmer for another 20 mins until the vegetables are cooked through.

  7. Serve with steamed white rice or eat alone & enjoy!
