I just finished Day 2 of my 12-week long strength training yesterday and can feel the muscle pain from head to toe.

Awww, I walk like a ducky – head goes first and legs catch up a few seconds later.

But you know what?  I LOVE IT!

Besides trying to get over being self-conscious in the gym in front of a bunch of super fit dudes and some ass-kicking bar-lifting girls, I am so happy that my man – Nate – is being my coach and helping me get through some serious tough times. :))

I said to myself the other day that Paleo is an awesome diet and the whole point of being Paleo, to me, is not only eating healthy but also being active for optimum health.

You probably will notice a slight content change in my current and upcoming posts on this blog because I want to share what I eat on a daily basis with a full-time office job, two dogs to care for – yes they are my children – and limited time over the weekend for meal & snack prep.

I hope using myself as an example will help some of you who are in a similar boat alleviate some headaches like – What to eat tonight, What should I feed my family when I’m on a diet etc.

These raw snack bars are one of the examples.

They are too simple to make. Don’t laugh at how short my instructions are. 🙂

It only requires 3 ingredients – Medjool dates, your favorite nuts, and cacao powder !

Yep, it’s that simple.

Just please remember one thing if you are trying to lose weight – have them in moderation.

Although dates are good for us, they naturally contain sugar.  I take half or ⅓ bite of the bar before or after the gym to maintain my blood sugar.

Raw (3 ingredient) Snack Bars

 

Ingredients:
1 cup nut of choice ( I use mixed pine nuts, sunflower seeds, and almonds today)
2 cups medjool dates
3 tbsp cacao powder

Steps:
1. Mix everything together in a food processor.
2. Mould into bars.
3. Chill them in the fridge until solid

Make these for dinner !
